This mildly sweet cookie has the perfect balance of sweet, crunchy, soft, and chewy plus it uses dried cherries (be sure there is nothing added of course). Raisins, dates or chopped dried apples may be added instead of the cherries. If fresh fruit is warranted, try blueberries or raspberries for a decadent treat.
If you ever want to find the healthy people at a party just announce that you’re the one who brought something healthy and they will be the only people who try it. What’s nice about this egg-free cookie recipe is that it appeals to vegans as well as vegetarians and pescatarians alike! It’s ok to add a little honey to sweeten this a bit for those who prefer it as well. Just remember the honey will brown them a little faster.
Please don’t eat like… four of these in a day like I did. Maybe I had five… don’t do it. Or do it, then just run a bunch of laps or play some tennis. Tennis is so much more intense than it looks and so much more fun to play than to watch! These are great tennis cookies. I picture them on the side of many courts.
