This mildly sweet cookie has the perfect balance of sweet, crunchy, soft, and chewy plus it uses dried cherries (be sure there is nothing added of course). Raisins, dates or chopped dried apples may be added instead of the cherries. If fresh fruit is warranted, try blueberries or raspberries for a decadent treat.

What’s nice about this egg-free cookie recipe is that it appeals to vegans as well as vegetarians and pescatarians alike! It’s ok to add a little honey to sweeten this a bit for those who prefer it as well. Just remember the honey will brown them a little faster.
